Ingredients

  • 1 kg Rice
  • 1 kg Yellow Moong Dal
  • 500 g Chana Dal
  • 200 g Dahi
  • 2 pcs Zucchini
  • - Green Peas
  • - Red Chilli Powder
  • 250 ml Olive Oil
  • 1 box Baking Soda
  • 250 g Carrot
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Soak the rice, split yellow lentils, and split chickpeas in water for 6-8 hours or overnight. Drain and grind into a smooth batter using a blender.
  2. 2. Mix the batter with yogurt, grated zucchini, grated carrot, green peas, turmeric powder, red chili powder, garam masala, and salt. Let it rest for 30 minutes.
  3. 3. Heat 1 tbsp oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Allow them to splutter, then mix them into the batter.
  4. 4. Stir baking soda into the batter just before cooking to create a fluffy texture.
  5. 5. Heat a non-stick pan or skillet on medium heat and add 1 tbsp oil. Pour a portion of the batter into the pan and spread it evenly to form a thick pancake.
  6. 6. Cover the pan and cook on low-medium heat for 5-7 minutes until the bottom turns golden brown. Flip and cook the other side for another 5-7 minutes.
  7. 7. Repeat with the remaining batter to make additional handvos. Serve hot with mint chutney or yogurt on the side.
