Ingredients
- 1 kg Rice
- 1 kg Yellow Moong Dal
- 500 g Chana Dal
- 200 g Dahi
- 2 pcs Zucchini
- - Green Peas
- - Red Chilli Powder
- 250 ml Olive Oil
- 1 box Baking Soda
- 250 g Carrot
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Soak the rice, split yellow lentils, and split chickpeas in water for 6-8 hours or overnight. Drain and grind into a smooth batter using a blender.
- 2. Mix the batter with yogurt, grated zucchini, grated carrot, green peas, turmeric powder, red chili powder, garam masala, and salt. Let it rest for 30 minutes.
- 3. Heat 1 tbsp oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Allow them to splutter, then mix them into the batter.
- 4. Stir baking soda into the batter just before cooking to create a fluffy texture.
- 5. Heat a non-stick pan or skillet on medium heat and add 1 tbsp oil. Pour a portion of the batter into the pan and spread it evenly to form a thick pancake.
- 6. Cover the pan and cook on low-medium heat for 5-7 minutes until the bottom turns golden brown. Flip and cook the other side for another 5-7 minutes.
- 7. Repeat with the remaining batter to make additional handvos. Serve hot with mint chutney or yogurt on the side.
