  • 80 g Soya Sauce
  • 500 ml Cooking Sake
  • 1.8 Ltr Sakura Hon Mirin Cooking Vinegar
  • 500Ml Habit Toasted Sesame Oil Cold Presses
  • 500g Gochujang (Korean Chili Paste)
  • 100 g Til
  • 500 g Brown Sugar
  • 100 g Garlic
  • loose Ginger

Instructions

  1. 1. Cut the chicken thighs into bite-sized pieces and set aside. Soak the bamboo skewers in water to prevent them from burning during cooking.
  2. 2. In a bowl, mix miso paste, soy sauce, sake (if using), mirin, sesame oil, chili paste, and brown sugar to create the spicy miso marinade.
  3. 3. Thread chicken pieces and spring onion chunks onto the soaked skewers, alternating between the two.
  4. 4. Brush the skewers generously with the spicy miso marinade, ensuring an even coating on all sides.
  5. 5. Preheat a grill or a grill pan over medium-high heat. Place the skewers on the grill and cook for 5-7 minutes on each side, basting occasionally with the marinade to enhance flavor.
  6. 6. Once the chicken is cooked through and slightly charred, remove the skewers from the grill and sprinkle with toasted sesame seeds for garnish.
  7. 7. Serve the Spicy Miso Chicken Yakitori hot, accompanied by steamed rice or a fresh salad for a complete meal.
