Ingredients

  • 200 g Paneer
  • 500 g Onion
  • 25 g Kasuri Methi
  • 200G Adrak Lasun Paste (200g)
  • 200 g Dahi
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder

Instructions

  1. 1. Heat ghee or oil in a heavy-bottomed pan on medium heat and add cumin seeds. Let them sizzle for 30 seconds.
  2. 2. Add the chopped onions and sauté until golden brown, about 6-8 minutes. Stir in the ginger-garlic paste and cook for another minute until fragrant.
  3. 3. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for 8-10 minutes until the tomatoes break down and the mixture turns into a thick masala base.
  4. 4. Stir in the crumbled paneer, ensuring it’s evenly coated with the masala. Add garam masala and kasuri methi, mixing well.
  5. 5. Lower the heat and add the whisked yogurt, stirring continuously to avoid curdling. Cover the pan with a lid and let the bhurji cook on dum for 5-7 minutes to allow the spices to infuse.
  6. 6. Remove the lid, garnish with chopped coriander leaves, and give it a final stir. Adjust seasoning if needed.
  7. 7. Serve hot with parathas, toasted bread, or steamed rice for a hearty breakfast.
