- 200 g Dahi
- medium Chilli Green Long

- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid

Instructions
- 1. Heat ghee or oil in a heavy-bottomed pan on medium heat and add cumin seeds. Let them sizzle for 30 seconds.
- 2. Add the chopped onions and sauté until golden brown, about 6-8 minutes. Stir in the ginger-garlic paste and cook for another minute until fragrant.
- 3. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for 8-10 minutes until the tomatoes break down and the mixture turns into a thick masala base.
- 4. Stir in the crumbled paneer, ensuring it’s evenly coated with the masala. Add garam masala and kasuri methi, mixing well.
- 5. Lower the heat and add the whisked yogurt, stirring continuously to avoid curdling. Cover the pan with a lid and let the bhurji cook on dum for 5-7 minutes to allow the spices to infuse.
- 6. Remove the lid, garnish with chopped coriander leaves, and give it a final stir. Adjust seasoning if needed.
- 7. Serve hot with parathas, toasted bread, or steamed rice for a hearty breakfast.
