- 250 g Mutton
- 200 g Dahi
- 500 g Onion
- medium Chilli Green Long
- - Mint Leaf
- 100 g Coriander Leaves
- 200G Adrak Lasun Paste (200g)
- - Red Chilli Powder
- 50g Everest Garam Masala
- 50 g Cloves
- 20 g Cardamom Green
- 20 g Cinnamon
- 1 liter Sunflower Oil
- 200 ml Ghee
- 1 kg Basmati Rice
- 100 g Jeera
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Wash the mutton pieces thoroughly and marinate them with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Cover and let it rest for at least 30 minutes.
- 2. Wash and soak the basmati rice for 30 minutes, then drain and set aside.
- 3. Heat oil in a large pan and fry the sliced onions until golden brown. Remove half of them for garnishing later.
- 4. In the same pan, add cumin seeds, cloves, cardamom, and cinnamon. Sauté until fragrant and then add the chopped tomatoes and green chilies. Cook until the tomatoes are soft.
- 5. Add the marinated mutton to the pan and cook on medium heat for 10-15 minutes until the spices blend and the mutton begins to release its juices.
- 6. In a separate pot, boil the soaked rice with salt until it's 70% cooked. Drain and set aside.
- 7. Layer the rice over the mutton mixture in the pan, alternating with mint and coriander leaves, and sprinkle the reserved fried onions on top.
- 8. Drizzle ghee over the layers and cover the pot tightly with a lid. Cook on low heat for 30-40 minutes to allow the flavors to meld together and the rice to finish cooking.
- 9. Once done, gently fluff the biryani with a fork to mix the layers without breaking the rice grains.
- 10. Serve hot with raita or a simple salad on the side.
