  • 250 g Mutton
  • 200 g Dahi
  • 500 g Onion
  • medium Chilli Green Long
  • - Mint Leaf
  • 100 g Coriander Leaves
  • 200G Adrak Lasun Paste (200g)
  • - Red Chilli Powder
  • 50g Everest Garam Masala
  • 50 g Cloves
  • 20 g Cardamom Green
  • 20 g Cinnamon
  • 1 liter Sunflower Oil
  • 200 ml Ghee
  • 1 kg Basmati Rice
  • 100 g Jeera
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash the mutton pieces thoroughly and marinate them with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Cover and let it rest for at least 30 minutes.
  2. 2. Wash and soak the basmati rice for 30 minutes, then drain and set aside.
  3. 3. Heat oil in a large pan and fry the sliced onions until golden brown. Remove half of them for garnishing later.
  4. 4. In the same pan, add cumin seeds, cloves, cardamom, and cinnamon. Sauté until fragrant and then add the chopped tomatoes and green chilies. Cook until the tomatoes are soft.
  5. 5. Add the marinated mutton to the pan and cook on medium heat for 10-15 minutes until the spices blend and the mutton begins to release its juices.
  6. 6. In a separate pot, boil the soaked rice with salt until it's 70% cooked. Drain and set aside.
  7. 7. Layer the rice over the mutton mixture in the pan, alternating with mint and coriander leaves, and sprinkle the reserved fried onions on top.
  8. 8. Drizzle ghee over the layers and cover the pot tightly with a lid. Cook on low heat for 30-40 minutes to allow the flavors to meld together and the rice to finish cooking.
  9. 9. Once done, gently fluff the biryani with a fork to mix the layers without breaking the rice grains.
  10. 10. Serve hot with raita or a simple salad on the side.
