Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- 500g Good Life Raw Peanuts 500 G
- 200 ml Mustard Oil
- 500 g Onion
- loose Ginger
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Dry roast the foxtail millet in a pan over medium heat for 2-3 minutes until aromatic, then set aside.
- 2. Heat oil in a large pan and add mustard seeds; when they splutter, add cumin seeds, curry leaves, and green chilies.
- 3. Add the peanuts and sauté for 1-2 minutes until golden and crunchy.
- 4. Stir in the chopped onions and grated ginger, cooking until the onions turn translucent.
- 5. Add the mixed vegetables, turmeric powder, red chili powder, and salt, then sauté for 3-4 minutes until the vegetables soften slightly.
- 6. Pour 2 cups of water and bring it to a gentle boil, then add the roasted millet and stir well.
- 7. Lower the heat, cover the pan, and let the millet cook for 12-15 minutes until it absorbs the water and becomes fluffy.
- 8. Turn off the heat, add lemon juice and chopped coriander leaves, and gently fluff the upma with a fork.
- 9. Serve hot, garnished with additional coriander leaves if desired.
