Ingredients
- 1 kg Rice
- 500 g Urad Dal
- 200 g Fenugreek Seeds
- 500 g Onion
- 250 g Carrot
- - Red Chilli Powder
- 200 ml Mustard Oil
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the soaked rice, urad dal, and fenugreek seeds, then grind them together with minimal water until a smooth batter is formed. Allow the batter to ferment overnight or for 8 hours in a warm place.
- 2. Once fermented, add salt, turmeric powder, and chili powder to the batter, mixing well to combine.
- 3. Prepare the topping by combining diced tomatoes, chopped onions, grated carrots, green chilies, and coriander leaves in a bowl. Mix well.
- 4. Heat a non-stick pan or tawa over medium heat and lightly grease it with oil.
- 5. Pour a ladleful of batter onto the pan and spread it gently to form a thick pancake. Sprinkle the prepared vegetable topping evenly over the batter and lightly press it down.
- 6. Cook on medium heat for 2-3 minutes, then drizzle a few drops of oil around the edges. Flip the uttapam carefully and cook the other side for an additional 2-3 minutes until golden brown and cooked through.
- 7. Repeat the process with the remaining batter and vegetable topping.
- 8. Serve the warm uttapams with coconut chutney or sambar for a complete breakfast.
