Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- 200 ml Mustard Oil
- 50 g Asafoetida Powder
- 500 g Onion
- 250 g Carrot
- medium Chilli Green Long
- 100 g Curry Leaves
- 100 g Jeera
- 100 g Yellow Mustard Seeds
- 250 g French Beans
- 100 g Coriander Leaves
- - Green Peas
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the millet thoroughly in water and soak it for 15 minutes. Drain and set aside.
- 2. Heat oil in a pan on medium heat. Add mustard seeds and let them splutter, then add cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for 1 minute until aromatic.
- 3. Add the chopped onion and sauté until translucent. Then, add carrots, beans, and green peas, and cook for 3-4 minutes until the vegetables soften slightly.
- 4. Mix in the turmeric powder and salt, stirring well to coat the vegetables.
- 5. Add the drained millet to the pan and sauté for 2-3 minutes to lightly toast it. This enhances its nutty flavor.
- 6. Pour in 2 cups of hot water, stir, and cover the pan. Cook on low heat for 15 minutes or until the millet is tender and the water is absorbed.
- 7. Turn off the heat, fluff the millet with a fork, and mix in the chopped coriander leaves and lemon juice. Adjust salt if needed.
- 8. Serve the Spiced Veggie Millet Upma warm, garnished with additional coriander leaves if desired.
