Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 200 ml Mustard Oil
  • 50 g Asafoetida Powder
  • 500 g Onion
  • 250 g Carrot
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Yellow Mustard Seeds
  • 250 g French Beans
  • 100 g Coriander Leaves
  • - Green Peas
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the millet thoroughly in water and soak it for 15 minutes. Drain and set aside.
  2. 2. Heat oil in a pan on medium heat. Add mustard seeds and let them splutter, then add cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for 1 minute until aromatic.
  3. 3. Add the chopped onion and sauté until translucent. Then, add carrots, beans, and green peas, and cook for 3-4 minutes until the vegetables soften slightly.
  4. 4. Mix in the turmeric powder and salt, stirring well to coat the vegetables.
  5. 5. Add the drained millet to the pan and sauté for 2-3 minutes to lightly toast it. This enhances its nutty flavor.
  6. 6. Pour in 2 cups of hot water, stir, and cover the pan. Cook on low heat for 15 minutes or until the millet is tender and the water is absorbed.
  7. 7. Turn off the heat, fluff the millet with a fork, and mix in the chopped coriander leaves and lemon juice. Adjust salt if needed.
  8. 8. Serve the Spiced Veggie Millet Upma warm, garnished with additional coriander leaves if desired.
