- 250g Swad White Aval 250g
- 500 g Onion
- 200 ml Mustard Oil
- 250 g Carrot
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- 50G Green Chilies
- - Green Peas
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the flattened rice (poha) under running water in a colander until soft, then set aside to drain completely.
- 2. Heat mustard oil in a large pan over medium heat. Add Panch Phoron and let it sizzle for 30 seconds until aromatic.
- 3. Add the chopped onion, green chilies, and curry leaves. Sauté for 2-3 minutes until the onion turns translucent.
- 4. Stir in the diced carrot and green peas. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender.
- 5. Add turmeric powder, red chili powder, and salt to the pan. Mix well to coat the vegetables evenly with the spices.
- 6. Gently fold in the softened poha, ensuring it is evenly mixed with the spiced vegetables. Cook for 2-3 minutes on low heat.
- 7. Turn off the heat and stir in the lemon juice and roasted peanuts for added tang and crunch.
- 8. Garnish with fresh coriander leaves and serve warm.
