Ingredients

  • 1 Kg Lokwan Premium Wheat Atta 1 Kg
  • - Olive Oil
  • 2 pcs Zucchini
  • 200 g Dahi
  • 1Bunch Pudina
  • 250 g Carrot
  • 500 g Capsicum Green
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Methi
  • 100 g Salt
  • 50 g Cumin Powder

Instructions

  1. 1. In a mixing bowl, combine whole wheat flour, chopped fenugreek leaves, turmeric powder, cumin seeds, red chili powder, garam masala, yogurt, and salt. Gradually add water and knead into a soft dough. Cover and let rest for 15 minutes.
  2. 2. Heat 1 tablespoon of olive oil in a pan. Add julienned carrots, bell peppers, and zucchini. Sauté for 5-7 minutes until tender but still crisp. Season with salt and set aside.
  3. 3. Prepare the yogurt-mint sauce by mixing plain yogurt, chopped mint leaves, roasted cumin powder, and salt in a small bowl. Adjust seasoning as needed and refrigerate until ready to use.
  4. 4. Divide the dough into equal portions and roll each portion into a thin circle (approx. 6-7 inches in diameter). Heat a skillet over medium heat and cook each thepla for 1-2 minutes on each side, brushing lightly with olive oil until golden brown spots appear.
  5. 5. To assemble, place a thepla on a flat surface. Spread a spoonful of yogurt-mint sauce evenly across the center, add a generous layer of sautéed vegetables, and fold into a wrap. Repeat with the remaining theplas and filling.
