Ingredients
- 200 g Paneer
- 1 head Cauliflower
- 250 g French Beans
- - Grated Coconut
- - Coconut Oil
- 50 g Black Pepper Powder
- 500 g Tomato - Hybrid
- - Coriander Powder
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 1 tbsp coconut oil in a pan over medium heat. Add mustard seeds, cumin seeds, and curry leaves, and let them splutter for 30 seconds.
- 2. Add the diced tomatoes and cook until softened, about 5 minutes. Stir in turmeric powder, coriander powder, garam masala, red chili powder, ground black pepper, and salt.
- 3. Add the grated coconut and mix well, cooking for 2-3 minutes until the mixture becomes fragrant.
- 4. Add the cauliflower florets and green beans to the pan, stirring to coat them in the spice mixture. Cover and cook for 10 minutes, stirring occasionally.
- 5. In a separate pan, heat the remaining 1 tbsp coconut oil and lightly fry the paneer cubes until golden on all sides. Add the paneer to the vegetable mixture.
- 6. Stir everything together and simmer for another 5 minutes to allow the flavors to meld. Adjust salt and spices if needed.
- 7. Serve hot with chapatis, dosa, or steamed rice for a complete breakfast meal.
