Ingredients
- 500 g Onion
- 250 g Carrot
- 100 g Salt
- 100 g Lemon
- 100 g Coriander Leaves
- 500 g Suji
- 500 g Capsicum Green
- medium Chilli Green Long
- 100 g Curry Leaves
- - Green Peas
- 100 g Jeera
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Dry roast the semolina in a pan on medium heat for 5-6 minutes, stirring continuously until it is lightly golden and aromatic. Set aside to cool.
- 2. Heat ghee or oil in a tawa or large skillet over medium heat. Add mustard seeds and let them crackle, then add cumin seeds, curry leaves, and chopped green chili. Sauté for 30 seconds.
- 3. Add the chopped onion and sauté until they turn translucent, about 2-3 minutes. Stir in the turmeric powder.
- 4. Add the chopped carrot, green peas, and bell peppers to the pan. Sauté the vegetables for 3-4 minutes until slightly tender but still crisp.
- 5. Add 2 cups of hot water to the pan and bring it to a gentle boil. Stir in the salt and gradually add the roasted semolina, stirring continuously to avoid lumps.
- 6. Lower the heat and cook the mixture for 4-5 minutes, stirring occasionally, until the semolina absorbs all the water and becomes soft and fluffy.
- 7. Turn off the heat and stir in the lemon juice. Garnish with chopped coriander leaves and mix gently.
- 8. Serve hot with a side of coconut chutney or plain yogurt for a complete breakfast experience.
