Ingredients

  • 1 kg Basmati Rice
  • 250 g Carrot
  • 250 g French Beans
  • 500 g Onion
  • 200 ml Ghee
  • 100 g Salt
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • - Green Peas
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 1 kg Yellow Moong Dal

Instructions

  1. 1. Rinse the basmati rice and yellow moong dal thoroughly and soak them in water for 20 minutes, then drain.
  2. 2. Heat ghee in a tawa or large pan over medium heat and add cumin seeds. Let them splutter.
  3. 3. Add the chopped onion and green chilies, sauté until the onion turns golden brown.
  4. 4. Stir in the diced carrot, green beans, and green peas. Cook for 3-4 minutes until the vegetables begin to soften.
  5. 5. Add the chopped tomato, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes soften and the spices are well incorporated.
  6. 6. Add the drained rice and yellow moong dal to the pan and mix well with the vegetable and spice mixture.
  7. 7. Pour in 4 cups of hot water, stir, and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it cook for 20-25 minutes until the rice and dal are tender and the water is absorbed.
  8. 8. Sprinkle garam masala and fresh coriander leaves over the khichdi, gently mix, and let it rest for 2 minutes before serving.
  9. 9. Serve hot with yogurt or pickle on the side for a complete meal.
