Ingredients
- 1 kg Basmati Rice
- 250 g Carrot
- 250 g French Beans
- 500 g Onion
- 200 ml Ghee
- 100 g Salt
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- - Green Peas
- 100 g Jeera
- 100 g Red Chili Powder
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 1 kg Yellow Moong Dal
Instructions
- 1. Rinse the basmati rice and yellow moong dal thoroughly and soak them in water for 20 minutes, then drain.
- 2. Heat ghee in a tawa or large pan over medium heat and add cumin seeds. Let them splutter.
- 3. Add the chopped onion and green chilies, sauté until the onion turns golden brown.
- 4. Stir in the diced carrot, green beans, and green peas. Cook for 3-4 minutes until the vegetables begin to soften.
- 5. Add the chopped tomato, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes soften and the spices are well incorporated.
- 6. Add the drained rice and yellow moong dal to the pan and mix well with the vegetable and spice mixture.
- 7. Pour in 4 cups of hot water, stir, and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it cook for 20-25 minutes until the rice and dal are tender and the water is absorbed.
- 8. Sprinkle garam masala and fresh coriander leaves over the khichdi, gently mix, and let it rest for 2 minutes before serving.
- 9. Serve hot with yogurt or pickle on the side for a complete meal.
