Ingredients
- 10 pcs Prawns
- - Dairy Milk
- - Fresh Cream
- 200 g Sweetened Condensed Milk
- 0.25 g Saffron
- 200 ml Ghee
- 500 g Sugar
- 20 g Cardamom Powder
- 50 g Nutmeg Powder
- Unsalted Sliced Pistachio (Unsalted) (100g)
Instructions
- 1. Heat the ghee in a pan over medium heat. Add the cleaned prawns and cook for 2-3 minutes until they turn pink. Remove from heat and set aside to cool.
- 2. In a separate heavy-bottomed pot, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring occasionally, until the milk reduces to half its original volume.
- 3. Add the saffron strands, ground cardamom, and nutmeg to the milk. Stir well and let the spices infuse for 2-3 minutes.
- 4. Stir in the fresh cream, condensed milk, and sugar. Continue to simmer for another 5-6 minutes, ensuring the mixture thickens slightly.
- 5. Finely chop the cooked prawns and gently fold them into the milk mixture along with the rose water and half of the chopped pistachios.
- 6. Pour the mixture into kulfi molds or small bowls. Sprinkle the remaining pistachios on top for garnish.
- 7. Cover the molds or bowls with aluminum foil and insert an ice cream stick (if using molds). Freeze for at least 6-8 hours or until fully set.
- 8. To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Plate and enjoy immediately.
