Ingredients

  • 10 pcs Prawns
  • - Dairy Milk
  • - Fresh Cream
  • 200 g Sweetened Condensed Milk
  • 0.25 g Saffron
  • 200 ml Ghee
  • 500 g Sugar
  • 20 g Cardamom Powder
  • 50 g Nutmeg Powder
  • Unsalted Sliced Pistachio (Unsalted) (100g)

Instructions

  1. 1. Heat the ghee in a pan over medium heat. Add the cleaned prawns and cook for 2-3 minutes until they turn pink. Remove from heat and set aside to cool.
  2. 2. In a separate heavy-bottomed pot, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring occasionally, until the milk reduces to half its original volume.
  3. 3. Add the saffron strands, ground cardamom, and nutmeg to the milk. Stir well and let the spices infuse for 2-3 minutes.
  4. 4. Stir in the fresh cream, condensed milk, and sugar. Continue to simmer for another 5-6 minutes, ensuring the mixture thickens slightly.
  5. 5. Finely chop the cooked prawns and gently fold them into the milk mixture along with the rose water and half of the chopped pistachios.
  6. 6. Pour the mixture into kulfi molds or small bowls. Sprinkle the remaining pistachios on top for garnish.
  7. 7. Cover the molds or bowls with aluminum foil and insert an ice cream stick (if using molds). Freeze for at least 6-8 hours or until fully set.
  8. 8. To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Plate and enjoy immediately.
