Ingredients

  • 200 g Paneer
  • 500 g Onion
  • 250 g Cucumber
  • 400 g Curd
  • 200 ml Mustard Oil
  • 1 kg Bell Peppers
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 100 g Jeera Powder
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a bowl, mix curd, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, lemon juice, and salt to create a marinade.
  2. 2. Add the paneer strips to the marinade, gently coat them, and let them rest for 15-20 minutes.
  3. 3. Heat 1 tbsp oil in a pan over medium heat and sauté the sliced onions and bell peppers until slightly softened but still crisp, about 3-4 minutes.
  4. 4. In the same pan, add the marinated paneer and cook for 4-5 minutes, stirring gently to avoid breaking the paneer.
  5. 5. Warm the whole wheat flatbreads on a skillet and set aside.
  6. 6. To assemble the rolls, place a portion of the paneer and vegetable mixture in the center of each flatbread, top with cucumber juliennes, and sprinkle with fresh coriander leaves.
  7. 7. Roll the flatbreads tightly around the filling, securing them with parchment paper or a toothpick if needed.
  8. 8. Serve the kathi rolls warm, optionally paired with a side of mint yogurt dip.
