Ingredients
- 200 g Paneer
- 500 g Onion
- 250 g Cucumber
- 400 g Curd
- 200 ml Mustard Oil
- 1 kg Bell Peppers
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera Powder
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. In a bowl, mix curd, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, lemon juice, and salt to create a marinade.
- 2. Add the paneer strips to the marinade, gently coat them, and let them rest for 15-20 minutes.
- 3. Heat 1 tbsp oil in a pan over medium heat and sauté the sliced onions and bell peppers until slightly softened but still crisp, about 3-4 minutes.
- 4. In the same pan, add the marinated paneer and cook for 4-5 minutes, stirring gently to avoid breaking the paneer.
- 5. Warm the whole wheat flatbreads on a skillet and set aside.
- 6. To assemble the rolls, place a portion of the paneer and vegetable mixture in the center of each flatbread, top with cucumber juliennes, and sprinkle with fresh coriander leaves.
- 7. Roll the flatbreads tightly around the filling, securing them with parchment paper or a toothpick if needed.
- 8. Serve the kathi rolls warm, optionally paired with a side of mint yogurt dip.
