Ingredients

  • 1 Kg Lokwan Premium Wheat Atta 1 Kg
  • - Besan
  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 100 g Coriander Leaves
  • 100 g Ajwain
  • 200 g Dahi
  • 200 g Paneer
  • 200 ml Mustard Oil
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 500 g Capsicum Green
  • - Chaat Masala
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a large mixing bowl, combine whole wheat flour, besan, bajra flour, chopped coriander, turmeric powder, red chili powder, cumin seeds, carom seeds, salt, and yogurt. Mix well and knead into a soft, pliable dough, adding a little water if needed. Cover and let it rest for 15 minutes.
  2. 2. In a pan, heat 1 tablespoon of oil over medium heat. Add the finely chopped cabbage and capsicum, and sauté for 3-4 minutes until slightly tender. Stir in grated paneer, chaat masala, garam masala, and salt. Mix well and cook for another 2 minutes. Turn off the heat and let the mixture cool.
  3. 3. Divide the dough into 4 portions and roll each into a small ball. Roll out each ball into a thin circular thepla using a rolling pin, dusting with flour to prevent sticking.
  4. 4. Heat a tawa or flat pan over medium heat. Cook each thepla for 1-2 minutes on each side, brushing lightly with oil, until golden brown spots appear. Keep the cooked theplas covered to stay warm.
  5. 5. To assemble the wraps, place a portion of the cooked vegetable-paneer filling onto each thepla. Fold the sides over the filling to form a wrap.
  6. 6. Serve warm with a side of yogurt or mint chutney for a wholesome breakfast.
