- 200 g Paneer
- 100 g Quinoa
- 500 g Onion
- 500 g Capsicum Green
- 300 g Ginger Paste
- 100G Oleo
- 1 kg Bell Peppers
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Cook the quinoa: In a medium pot, bring 2 cups of water to a boil, add the rinsed quinoa and a pinch of salt. Cover and simmer for 15 minutes until quinoa is fluffy. Set aside.
- 2. Heat 1 tbsp of oil in a kadhai or skillet over medium heat. Add the cubed paneer and lightly sauté until golden on all sides. Remove and set aside.
- 3. In the same kadhai, add 1 tbsp of oil. Add cumin seeds and let them splutter. Then add the sliced onion and sauté until lightly golden.
- 4. Stir in the ginger paste and sauté for 1 minute until fragrant. Add the chopped tomatoes, turmeric, coriander powder, red chili powder, and salt. Cook for 5-7 minutes until the tomatoes break down into a thick masala.
- 5. Add the sliced green and red bell peppers to the kadhai. Cook for 3-4 minutes, keeping them slightly crunchy.
- 6. Return the sautéed paneer to the kadhai, sprinkle garam masala, and mix well. Cook for another 2-3 minutes for the flavors to combine.
- 7. To serve, divide the cooked quinoa into bowls, top with the spiced paneer and vegetable mixture, and garnish with fresh cilantro.
