Ingredients
- 250 g Spinach
- 1 pc (approx. 500 g to 800 g) Cabbage
- 200 ml Mustard Oil
- - Besan
- 200 g Dahi
- 500 ml Buttermilk
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Curry Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a mixing bowl, combine gram flour, spinach, cabbage, green chili, turmeric powder, and salt. Gradually add water to form a thick batter for dumplings.
- 2. Heat oil in a pan, drop spoonfuls of the batter to form small dumplings, and fry until golden brown. Remove and set aside.
- 3. In a separate deep pan, heat 1 tbsp oil and add mustard seeds, cumin seeds, curry leaves, and coriander powder. Sauté until aromatic.
- 4. Whisk yogurt and buttermilk together, then pour into the pan. Add turmeric powder, red chili powder, and salt, stirring to combine.
- 5. Bring the mixture to a gentle simmer on low heat, stirring continuously to prevent curdling.
- 6. Add the fried dumplings to the kadhi, simmer for another 5-7 minutes to allow flavors to meld.
- 7. Garnish with freshly chopped coriander and serve hot with steamed rice or flatbread.
