Ingredients
- 1 kg Basmati Rice
- 200 g Paneer
- 500 g Onion
- 500 g Tomato - Hybrid
- loose Ginger
- 200 ml Ghee
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 1 kg Yellow Moong Dal
Instructions
- 1. Rinse the basmati rice and moong dal separately until the water runs clear, then soak them in water for 20 minutes and drain.
- 2. Heat 1 tablespoon of ghee in a large pot over medium heat. Add cumin seeds and let them splutter, then add the chopped onions and sauté until golden brown.
- 3. Stir in the grated ginger, green chilies, and tomatoes. Cook until the tomatoes are soft and the mixture is well combined.
- 4. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2 minutes to enhance the flavors.
- 5. Add the drained rice and moong dal to the pot, stirring gently to coat them with the spice mixture.
- 6. Pour in 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, stirring occasionally to prevent sticking.
- 7. In a separate pan, heat the remaining tablespoon of ghee and lightly fry the paneer cubes until golden. Add the fried paneer and garam masala to the khichdi and mix well.
- 8. Cook the khichdi on low heat for an additional 5 minutes, allowing the flavors to meld. Adjust seasoning if necessary.
- 9. Garnish with chopped coriander leaves and serve hot with a side of yogurt or pickle.
