Ingredients
- 1 kg Basmati Rice
- 1 kg Yellow Moong Dal
- 200 ml Ghee
- 100 g Garlic
- 20 g Cardamom Green
- 300 g Ginger Paste
- 1 head Cauliflower
- 250 g Carrot
- - Green Peas
- 500 g Sugar
- 100 g Coriander Leaves
- 100 g Dalchini (Cassia )
- 100 g Jeera
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
Instructions
- 1. Rinse the basmati rice and moong dal thoroughly under running water until the water runs clear, then soak them together for 30 minutes.
- 2. Heat the ghee in a deep pan on medium heat. Add cumin seeds, bay leaf, cloves, cardamom pods, and cinnamon stick, and sauté for 1 minute until fragrant.
- 3. Add ginger paste and turmeric powder, stirring constantly for 30 seconds, then add the drained rice and lentils and sauté for 2-3 minutes.
- 4. Add cauliflower, carrots, and peas, followed by 4 cups of water. Season with salt and sugar, and bring to a boil.
- 5. Reduce the heat to low, cover the pan, and simmer for 20-25 minutes until the rice, lentils, and vegetables are tender and the khichuri has a creamy consistency.
- 6. Adjust seasoning if needed and garnish with chopped fresh coriander before serving warm.
