Instructions

  1. 1. Peel the potatoes and cut them into thin slices.
  2. 2. Heat olive oil in a large, non-stick skillet over medium heat.
  3. 3. Add the sliced potatoes to the skillet and cook for about 10 minutes, stirring occasionally until they start to soften.
  4. 4. Slice the onions finely and add them to the skillet with the potatoes.
  5. 5. Continue cooking the potatoes and onions together until the onions are translucent and the potatoes are fully cooked.
  6. 6. In a mixing bowl, beat the eggs and season them with salt and pepper.
  7. 7. Remove the skillet from the heat and let the potato and onion mixture cool slightly.
  8. 8. Add the cooled potato and onion mixture to the beaten eggs and mix well to combine.
  9. 9. Heat a small amount of olive oil in the skillet over medium heat.
  10. 10. Pour the egg mixture into the skillet and spread it evenly.
  11. 11. Cook the frittata on low heat for about 10 minutes, until the bottom is set and the top is slightly runny.
  12. 12. Carefully flip the frittata using a large plate or lid and slide it back into the skillet to cook the other side.
  13. 13. Cook for an additional 5 minutes, or until the frittata is fully set and golden on both sides.
  14. 14. Slide the frittata onto a serving plate, slice into wedges, and serve warm or at room temperature.
