- 200 ml Mustard Oil
- 500 g Onion
- 250 g Carrot
- - Frozen Peas
- 200 ml Coconut Milk
- - Grated Coconut
- 250 g French Beans
- 100 g Coriander Leaves
- 50 g Cumin Powder
- 100 g Curry Leaves
- 50G Green Chilies
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat oil in a pan over medium heat and add mustard seeds. Allow them to splutter, then add curry leaves and green chilies. Sauté for 30 seconds until aromatic.
- 2. Add the chopped onion and sauté until translucent, about 2-3 minutes. Stir in the carrot, beans, and peas, and cook for another 3-4 minutes until the vegetables are slightly tender.
- 3. Mix in the turmeric powder, cumin powder, and salt, stirring well to coat the vegetables with the spices.
- 4. Add the roasted vermicelli to the pan and stir to combine. Pour in the coconut milk and mix thoroughly.
- 5. Cover the pan and allow the vermicelli to cook on low heat for 6-8 minutes, stirring occasionally, until it absorbs the coconut milk and becomes soft.
- 6. Once cooked, remove from heat and garnish with grated coconut and chopped coriander leaves.
