Ingredients
- 1 Kg Idly/Dosa Batter
- 1 pc (approx. 500 g to 800 g) Cabbage
- 100 g Curry Leaves
- 100 g Hing Khoda
- 100G Oleo
- 500 g Capsicum Green
- 100 g Coriander Leaves
- 50G Green Chilies
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Prepare the topping by mixing the chopped tomato, capsicum, shredded cabbage, green chilies, curry leaves, and coriander leaves in a bowl. Add salt, turmeric powder, and red chili powder, then combine well.
- 2. Heat a non-stick skillet or tawa over medium heat and add 1 tsp vegetable oil. Once hot, add mustard seeds and cumin seeds; let them sputter for 30 seconds. Sprinkle hing to enhance the aroma.
- 3. Pour a ladleful of the fermented batter onto the skillet to form a medium-sized pancake. Spread slightly for even thickness and ensure the batter is not too thin.
- 4. Quickly sprinkle the prepared vegetable topping evenly over the batter while it is still wet. Gently press the toppings using a spatula so they stick to the pancake.
- 5. Cook on medium heat until the underside turns golden brown, approximately 2-3 minutes. Flip the uttapam carefully and cook the other side for another 2 minutes until the vegetables are lightly charred and the pancake is cooked through.
- 6. Repeat the process with the remaining batter and vegetable topping, adding oil as needed between batches.
- 7. Serve hot uttapams with coconut chutney or tomato-based dipping sauces for a delightful breakfast.
