- 200 G Star Lion Rice Vermicelli
- 100G Oleo
- 500 g Onion
- 250 g Carrot
- 250 g French Beans
- 100 g Coriander Leaves
- medium Chilli Green Long
- 100 g Curry Leaves
- - Green Peas
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds

- 1. Boil rice vermicelli according to the package instructions, drain, and set aside to cool slightly.
- 2. Heat vegetable oil in a large pan or wok over medium heat. Add mustard seeds and let them splutter.
- 3. Add curry leaves and green chilies, stirring for 30 seconds until aromatic.
- 4. Add the chopped onion and sauté until translucent, about 2-3 minutes.
- 5. Stir in the carrots, green beans, and green peas. Sprinkle turmeric powder and salt, and cook for 4-5 minutes until the vegetables are tender but still crisp.
- 6. Gently fold in the cooked vermicelli, ensuring it is evenly coated with the vegetables and spices. Cook for 2-3 minutes, stirring gently to avoid breaking the vermicelli.
- 7. Turn off the heat, add lemon juice, and mix well. Garnish with fresh coriander before serving.
