Ingredients
- 1 Kg Idly/Dosa Batter
- 100G Oleo
- 100 g Curry Leaves
- 500 g Onion
- - Green Peas
- 250 g Carrot
- medium Chilli Green Long
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 1 tbsp vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them crackle for 30 seconds, then add curry leaves.
- 2. Add the chopped onion and green chili to the pan. Sauté until the onion turns translucent, about 3-4 minutes.
- 3. Stir in the chopped tomato and cook until it softens, about 3 minutes. Add turmeric powder, red chili powder, garam masala, and salt; mix well.
- 4. Add boiled green peas and grated carrot. Cook for 5 minutes, stirring occasionally, until the vegetables are well-coated with the spices.
- 5. Turn off the heat and mix in the chopped coriander. Set the masala filling aside to cool slightly.
- 6. Heat a non-stick skillet over medium heat. Pour a ladleful of dosa batter onto the skillet and spread it thinly in a circular motion to form a dosa.
- 7. Drizzle a few drops of oil around the edges and let the dosa cook for 2-3 minutes until golden and crispy. Flip if needed, then remove the dosa from the skillet.
- 8. Place a portion of the masala filling on one side of the dosa, roll it tightly, and repeat for the remaining batter and filling.
- 9. Serve the dosa rolls warm with coconut chutney or sambar for a complete breakfast experience.
