Ingredients

  • 6 pcs White Eggs
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 100G Oleo
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 100 g Salt

Instructions

  1. 1. Boil the eggs in a pot for 8-10 minutes until hard-boiled. Peel and set aside.
  2. 2. Heat vegetable oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. 3. Add curry leaves and chopped green chili to the pan, sauté for 30 seconds until fragrant.
  4. 4. Add the finely chopped onions and cook until golden brown, approximately 5-6 minutes.
  5. 5. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and the masala thickens, about 8-10 minutes.
  6. 6. Slice the boiled eggs in half and gently add them to the masala. Coat the eggs evenly with the spice mixture, cooking for 2-3 minutes.
  7. 7. Sprinkle garam masala and chopped cilantro over the eggs. Mix gently to avoid breaking the eggs.
