Ingredients
- 6 pcs White Eggs
- 500 g Onion
- 500 g Tomato - Hybrid
- 100G Oleo
- medium Chilli Green Long
- 100 g Curry Leaves
- 100 g Red Chili Powder
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Salt
Instructions
- 1. Boil the eggs in a pot for 8-10 minutes until hard-boiled. Peel and set aside.
- 2. Heat vegetable oil in a pan over medium heat. Add mustard seeds and let them splutter.
- 3. Add curry leaves and chopped green chili to the pan, sauté for 30 seconds until fragrant.
- 4. Add the finely chopped onions and cook until golden brown, approximately 5-6 minutes.
- 5. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and the masala thickens, about 8-10 minutes.
- 6. Slice the boiled eggs in half and gently add them to the masala. Coat the eggs evenly with the spice mixture, cooking for 2-3 minutes.
- 7. Sprinkle garam masala and chopped cilantro over the eggs. Mix gently to avoid breaking the eggs.
- 8. Serve warm as a standalone dish or alongside rice or roti for a complete meal.
