  • 50 g Cumin Powder

  • 200G Red Chilli Powder (Kashmiri) 200g
  • 200 ml Mustard Oil
  • 100 g Lemon

Instructions

  1. 1. Wash and pat dry the chicken wings thoroughly to remove excess moisture.
  2. 2. In a large mixing bowl, prepare the first marinade by combining lemon juice, salt, and red chili powder. Rub this mixture over the chicken wings and let it rest for 10 minutes.
  3. 3. Meanwhile, prepare the second marinade by whisking together yogurt, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, garam masala, Kashmiri red chili powder, and mustard oil until well blended.
  4. 4. Add the marinated chicken wings into the second marinade, ensuring each piece is coated thoroughly. Cover and refrigerate for at least 2 hours or overnight for best results.
  5. 5. Preheat the oven to 200°C (390°F) or prepare a grill on medium heat.
  6. 6. Line a baking tray with aluminum foil and place a wire rack on top. Arrange the marinated wings on the rack, ensuring they are spaced apart.
  7. 7. Cook the wings in the oven or grill for 20-25 minutes, turning them halfway through for even cooking. Brush with butter or ghee during the final 5 minutes for extra flavor.
  8. 8. Remove the wings from the oven or grill and garnish with freshly chopped coriander leaves and lemon wedges. Serve hot with mint chutney or onion rings.
