Ingredients
- 500 gm Eggplant
- 200 ml Fish Sauce
- 500 g Onion
- medium Chilli Green Long
- 100 g Tamarind Paste
- 500g Radish White
- 500g Okra
Instructions
- 1. In a large pot, bring 6 cups of water to a boil.
- 2. Add 500 grams of pork ribs and simmer for 30 minutes, skimming off any scum that rises to the surface.
- 3. Add 2 medium-sized tomatoes, quartered, and 1 medium-sized onion, sliced, to the pot. Simmer for another 10 minutes.
- 4. Add 1 packet (40 grams) of tamarind soup mix and stir until fully dissolved.
- 5. Add 1 medium-sized radish, peeled and sliced, and 1 medium-sized eggplant, sliced. Simmer for 5 minutes.
- 6. Add 1 bunch of kangkong (water spinach) and 2 pieces of long green chili. Simmer for another 3 minutes.
- 7. Season with fish sauce to taste. Start with 1 tablespoon and adjust as needed.
- 8. Remove from heat and serve hot with steamed rice.
