Ingredients
- 500 g Chicken Whole
- 200 g Dahi
- 250 ml Olive Oil
- - Baby Tomatoes
- 1Bunch Pudina
- - Cheddar Cheese Powder 100g
- 500 g Capsicum Green
- 250 ml Lemon Juice Concentrate
- 250 g Cucumber
- 50 g Black Pepper Powder
- - Coriander Powder
- 100 g Jeera Powder
- 100 g Red Chili Powder
- 20 g Turmeric Powder
Instructions
- 1. In a bowl, mix the hung curd, lemon juice, turmeric powder, cumin powder, coriander powder, red chili powder, and black pepper powder to create a marinade.
- 2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.
- 3. Heat olive oil in a pan over medium heat. Cook the marinated chicken for 8-10 minutes on each side, or until fully cooked and slightly charred. Let the chicken rest for 5 minutes, then slice into bite-sized pieces.
- 4. Spread the nachos evenly on a large serving platter. Scatter the cooked chicken pieces on top.
- 5. Add the sliced cherry tomatoes, diced cucumber, and diced capsicum over the chicken and nachos for a fresh crunch.
- 6. Sprinkle grated cheddar cheese evenly across the platter. Microwave or bake briefly until the cheese melts (approximately 2-3 minutes).
- 7. Garnish with freshly chopped mint leaves and serve warm for a deliciously satisfying meal.
