Ingredients
- 100 Ml Govind Ghee
- 500 g Suji
- 500G Madhur Sugar
- 200 g Table Salt
- 500 g Wheat Flour / Maida
- 500 Ml Champion Oil
Instructions
- 1. In a mixing bowl, combine 1 cup of wheat flour or maida, 2 tbsp of suji (semolina), and a pinch of table salt. Mix well to combine the dry ingredients.
- 2. In a small saucepan, heat 2 tbsp of Govind Ghee and 2 tbsp of Madhur Sugar over low flame. Stir continuously until the sugar dissolves completely. Remove from heat and let the mixture cool slightly.
- 3. Gradually add the cooled ghee and sugar mixture to the dry ingredients. Knead the mixture into a soft, non-sticky dough. If the dough feels too dry, add a small amount of water or milk (optional) to bring it together. Cover the dough and let it rest for 20 minutes.
- 4. After resting, roll out the dough to a thickness of about 1/4 inch on a lightly floured surface.
- 5. Using a knife or a pizza cutter, cut the rolled dough into small diamond or square shapes.
- 6. Heat Champion Oil in a deep frying pan over medium heat. Once the oil is hot, gently slide the cut pieces into the oil in small batches.
- 7. Fry the shankarpali until golden brown and crisp, stirring occasionally to ensure even cooking. Remove and drain on a paper towel to absorb excess oil.
- 8. Allow the shankarpali to cool completely before serving or storing in an airtight container.
