Instructions

  1. 1. Preheat oven to 350 degrees F (175 degrees C).
  2. 2. Wash the butternut squash thoroughly, cut off the top, and scrape out seeds and pulp. Set the squash aside.
  3. 3. In a large skillet, sauté 1 minced clove of garlic over medium-high heat until fragrant, about 2-3 minutes.
  4. 4. Stir in 1 1/2 teaspoons white sugar, 1 1/2 teaspoons Italian seasoning, 1 1/2 teaspoons salt, 1/8 teaspoon ground black pepper, 4 cups tomato juice, and 1 cup white rice. Mix well and cook for 5 minutes to combine flavors.
  5. 5. Layer the inside of the prepared butternut squash with 1/3 of 3 cups shredded cabbage, 1/2 cup chopped green beans, and the rice mixture. Repeat the layers until the squash is filled, finishing with the rice mixture on top.
  6. 6. Replace the squash lid and place the stuffed squash on a baking sheet. Bake in the preheated oven for 2 to 3 hours, or until the squash is tender when pierced with a fork.
  7. 7. Carefully remove the squash from the oven, let it cool slightly, and serve warm by scooping out portions of the filling along with the tender squash flesh.
