Ingredients
- 500 g Rava
- 200 ml Ghee
- 500 g Onion
- 100 g Salt
- 100 g Coriander Leaves
- 100 g Cashew Regular
- 250 g Carrot
- medium Chilli Green Long
- 100 g Curry Leaves
- - Green Peas
- 100 g Jeera
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat a pan on medium flame and dry roast the semolina (rava) for 3-4 minutes until it is aromatic and slightly golden. Transfer to a plate and set aside.
- 2. In the same pan, heat ghee. Add mustard seeds and let them splutter, then add cumin seeds, curry leaves, and green chili. Sauté for 30 seconds.
- 3. Add the chopped onion and sauté until translucent. Stir in the diced carrot and green peas, and cook for 3-4 minutes until the vegetables soften.
- 4. Sprinkle turmeric powder and salt into the pan, mixing well. Gradually pour in the hot water while stirring continuously to avoid lumps.
- 5. Slowly add the roasted semolina while stirring to ensure it combines evenly with the water and vegetables.
- 6. Cover the pan and let the upma cook on low heat for 3-4 minutes or until the semolina absorbs all the water and achieves a soft, fluffy texture.
- 7. Turn off the heat and garnish with fresh coriander leaves and toasted cashews. Serve warm.
