Ingredients
- 500 g Carrot
- 100 g Sambar Onion Peeled
- 150 g Popular Fit Eats Pitted Prunes, 150 Gm
- 100 g Garlic - Single Clove
- 5Ltr Vittorio Pomace Olive Oil
- 1 kg Whole Farm Brown Sugar
- 1 pack (50 g) Tmi Colman Tezpatta Bay Leaves
- 200 g Hommade Tomato Puree
Instructions
- 1. Heat 1/4 cup olive oil in a large heavy skillet or Dutch oven over medium heat. Add 1 lb stew meat and brown on all sides, about 5-7 minutes.
- 2. Reduce the heat to low and stir in 1 finely chopped onion and 1 minced clove of garlic. Cook until the onion becomes translucent, about 5 minutes.
- 3. Add 2 peeled and sliced carrots, 1/2 cup tomato puree, 1/2 cup chopped prunes, 1 tablespoon brown sugar, and 2 bay leaves. Stir to combine.
- 4. Cover the skillet or Dutch oven and let the stew simmer on low heat for 1 hour, stirring occasionally to prevent sticking.
- 5. Remove the bay leaves before serving. Serve the stew hot.
