Instructions
- 1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1-1/2 cups of diced sweet onion and sauté until caramelized, about 8-10 minutes.
- 2. Stir in 8 oz of sliced white button mushrooms and 8 oz of sliced cremini mushrooms. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Cook until the mushrooms release their moisture and start to brown, about 5-7 minutes.
- 3. Deglaze the pan with 1/2 cup of tomato juice. Add 2 tablespoons of minced garlic and cook until the liquid reduces by half, about 3-4 minutes.
- 4. Stir in 12 oz of soya chunks, 14 oz of tomato puree, 8 oz of tomato sauce, and 6 oz of tomato sauce. Mix well and bring to a simmer.
- 5. Add 1 teaspoon of red pepper flakes, 1/2 teaspoon of coriander powder, and 1/4 teaspoon of freshly grated nutmeg. Stir to combine and adjust seasoning to taste.
- 6. Add 1/4 cup of chopped fresh basil and 1/4 cup of chopped flat-leaf parsley, reserving a small amount of each for garnish. Stir well and let the sauce simmer for 10-15 minutes until thickened.
- 7. Serve the sauce over cooked penne pasta and garnish with the reserved basil and parsley. Optionally, top with kosher-certified shaved parmesan and asiago cheese.
