Ingredients

  • 50 g Basil
  • 25 g Parsley

  • 400 g Wickedgud 2X Fiber Penne Pasta | No Maida | Durum Wheat Semolina | Brown Rice | Healthy Diet Pasta
  • 1 ltr Bertolli Extra Virgin Olive Oil
  • 100 g Catch Sprinklers - Iodized Table Salt
  • 50 g On1Y Black Peppercorns With Grinder
  • 525 g Veeba Herby Tomato Pizza & Pasta Sauce
  • 60G Primi Piatti Red Chilli Flakes
  • 50 g Whole Farm Premium Nutmeg Whole
  • 200 g Hommade Tomato Puree
  • 100 g X 3 Mtr Coriander Powder Combo
  • 500 g Organically Grown White Onion
  • 200 g Fortune Soya Granules

Instructions

  1. 1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1-1/2 cups of diced sweet onion and sauté until caramelized, about 8-10 minutes.
  2. 2. Stir in 8 oz of sliced white button mushrooms and 8 oz of sliced cremini mushrooms. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Cook until the mushrooms release their moisture and start to brown, about 5-7 minutes.
  3. 3. Deglaze the pan with 1/2 cup of tomato juice. Add 2 tablespoons of minced garlic and cook until the liquid reduces by half, about 3-4 minutes.
  4. 4. Stir in 12 oz of soya chunks, 14 oz of tomato puree, 8 oz of tomato sauce, and 6 oz of tomato sauce. Mix well and bring to a simmer.
  5. 5. Add 1 teaspoon of red pepper flakes, 1/2 teaspoon of coriander powder, and 1/4 teaspoon of freshly grated nutmeg. Stir to combine and adjust seasoning to taste.
  6. 6. Add 1/4 cup of chopped fresh basil and 1/4 cup of chopped flat-leaf parsley, reserving a small amount of each for garnish. Stir well and let the sauce simmer for 10-15 minutes until thickened.
  7. 7. Serve the sauce over cooked penne pasta and garnish with the reserved basil and parsley. Optionally, top with kosher-certified shaved parmesan and asiago cheese.
