Ingredients
- 1 kg Basmati Rice
- 200 g Paneer
- 500 g Tomato - Hybrid
- 200 g Dahi
- 200G Adrak Lasun Paste (200g)
- 200 ml Ghee
- 100 g Tej Patta
- 50 g Cloves
- - Mint Leaf
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Dalchini (Cassia )
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- 2. Heat 2 tbsp of ghee in a large pan and add cumin seeds, bay leaves, cloves, and cinnamon stick. Sauté until aromatic.
- 3. Add the ginger-garlic paste and green chilies to the pan, cooking for 1 minute. Stir in the chopped tomatoes and sauté until soft.
- 4. Mix in the turmeric powder, garam masala, and salt, followed by the paneer cubes and mixed vegetables. Cook for 3-4 minutes.
- 5. Lower the heat, add the yogurt, and stir well to combine. Cook for another 2 minutes to allow the flavors to meld.
- 6. Add the soaked rice and gently mix, ensuring the grains remain intact. Pour enough water to cover the rice and vegetables.
- 7. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the dish to steam in its own juices.
- 8. Once the rice is cooked and fluffy, garnish with chopped coriander and mint leaves. Serve hot with raita or pickles.
