Ingredients

  • 1 kg Basmati Rice
  • 200 g Paneer
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200G Adrak Lasun Paste (200g)
  • 200 ml Ghee
  • 100 g Tej Patta
  • 50 g Cloves
  • - Mint Leaf
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Dalchini (Cassia )
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. 2. Heat 2 tbsp of ghee in a large pan and add cumin seeds, bay leaves, cloves, and cinnamon stick. Sauté until aromatic.
  3. 3. Add the ginger-garlic paste and green chilies to the pan, cooking for 1 minute. Stir in the chopped tomatoes and sauté until soft.
  4. 4. Mix in the turmeric powder, garam masala, and salt, followed by the paneer cubes and mixed vegetables. Cook for 3-4 minutes.
  5. 5. Lower the heat, add the yogurt, and stir well to combine. Cook for another 2 minutes to allow the flavors to meld.
  6. 6. Add the soaked rice and gently mix, ensuring the grains remain intact. Pour enough water to cover the rice and vegetables.
  7. 7. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the dish to steam in its own juices.
  8. 8. Once the rice is cooked and fluffy, garnish with chopped coriander and mint leaves. Serve hot with raita or pickles.
