- 250g Swad White Aval 250g
- 200 ml Ghee
- 500 g Onion
- 250 g Carrot
- 0.25 g Saffron
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- - Green Peas
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the flattened rice (poha) in a colander under running water until soft, then set aside to drain.
- 2. Heat ghee in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter, then add curry leaves and chopped green chili.
- 3. Stir in the chopped onion and sauté until translucent, followed by the diced tomato, green peas, and carrots. Cook for 3-4 minutes until the vegetables are tender.
- 4. Sprinkle turmeric powder and salt over the vegetables, then gently mix in the softened poha.
- 5. Dissolve saffron strands in 2 tbsp of warm water, then drizzle them over the poha. Stir gently to distribute the saffron evenly, ensuring the poha turns a vibrant yellow-orange hue.
- 6. Add lemon juice and adjust seasoning if needed. Cook for an additional 2 minutes to combine flavors.
- 7. Garnish with freshly chopped coriander leaves and serve hot.
