Ingredients

  • 250g Swad White Aval 250g
  • 200 ml Ghee
  • 500 g Onion
  • 250 g Carrot
  • 0.25 g Saffron
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • - Green Peas
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the flattened rice (poha) in a colander under running water until soft, then set aside to drain.
  2. 2. Heat ghee in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter, then add curry leaves and chopped green chili.
  3. 3. Stir in the chopped onion and sauté until translucent, followed by the diced tomato, green peas, and carrots. Cook for 3-4 minutes until the vegetables are tender.
  4. 4. Sprinkle turmeric powder and salt over the vegetables, then gently mix in the softened poha.
  5. 5. Dissolve saffron strands in 2 tbsp of warm water, then drizzle them over the poha. Stir gently to distribute the saffron evenly, ensuring the poha turns a vibrant yellow-orange hue.
  6. 6. Add lemon juice and adjust seasoning if needed. Cook for an additional 2 minutes to combine flavors.
