Ingredients

  • 2 pcs Zucchini
  • - Besan
  • 500 gm Eggplant
  • 200 g Table Salt
  • 190 ml White Cooking Vinegar
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Prepare the batter by mixing 1 cup of chickpea flour, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and a pinch of salt in a bowl.
  2. 2. Gradually add water to the mixture while whisking until you achieve a smooth, lump-free batter with a consistency similar to pancake batter.
  3. 3. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
  4. 4. Dip thin slices of zucchini and eggplant into the batter, ensuring they are evenly coated.
  5. 5. Carefully place the battered slices in the skillet and fry until golden brown on both sides, about 2-3 minutes per side.
  6. 6. Remove the fried slices and place them on a paper towel to drain excess oil.
  7. 7. Repeat the process with the remaining vegetable slices, adding more oil to the skillet as needed.
  8. 8. Serve hot with a dipping sauce made from soy sauce, vinegar, and a pinch of sugar.
