Ingredients

  • 500 g Sabudana / Sago
  • 200 ml Coconut Milk
  • 100 g Almonds
  • 100 g Kaju Tukda
  • 1kg Dashhari Mango
  • 100g Good Life Yellow Kishmish 100 G
  • 500 g Jaggery Powder
  • 1 piece Banana
  • 100 g Salt
  • 20 g Cardamom Powder

Instructions

  1. 1. Rinse the sabudana thoroughly under running water until the water runs clear, then soak it in enough water for 4-5 hours or overnight until soft and plump.
  2. 2. In a saucepan, add the soaked sabudana, coconut milk, and a pinch of salt. Cook on medium heat, stirring continuously to prevent sticking, until the sabudana turns translucent and the mixture thickens, about 10-12 minutes.
  3. 3. Lower the heat and stir in the grated jaggery until it dissolves completely. Add the cardamom powder and mix well. Remove from heat and let the pudding cool to room temperature.
  4. 4. Meanwhile, lightly toast the chopped almonds and cashews in a dry pan over low heat until golden and aromatic. Set aside.
  5. 5. Assemble the parfait by layering the sabudana pudding, fresh fruits (mango, banana, and pomegranate), and toasted nuts in serving glasses or bowls. Repeat the layers as desired.
