Ingredients
- 500 g Capsicum Green
- 2 pcs Zucchini
- 250 g French Beans
- - Green Peas
- 250 ml Olive Oil
- 500 g Tomato - Hybrid
- 50 g Asafoetida Powder
- 1 pc (approx. 500 g to 800 g) Cabbage
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Heat 2 tablespoons of cooking oil on a tawa or wide skillet over medium heat.
- 2. Add asafoetida and cumin seeds, and let them sizzle for 30 seconds until aromatic.
- 3. Add the chopped capsicum, cabbage, zucchini, green beans, and green peas. Sauté for 5-7 minutes, stirring occasionally.
- 4. Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables evenly with the spices.
- 5. Add the diced tomatoes and cook for another 5 minutes until they soften and blend with the spices.
- 6. Sprinkle garam masala and mix thoroughly. Let the vegetables cook for another 2-3 minutes to allow the flavors to meld.
- 7. Turn off the heat and garnish with freshly chopped coriander leaves.
- 8. Serve hot with warm rotis, parathas, or steamed rice for a wholesome family meal.
