Ingredients
- 1 head Cauliflower
- 250 g French Beans
- 250 g Carrot
- 500 g Tomato - Hybrid
- 500 g Onion
- - Coconut Oil
- 1 kg Bell Peppers
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat coconut oil on a tawa or large griddle over medium heat and add mustard seeds. Once they start popping, add curry leaves and sauté for 30 seconds.
- 2. Add the chopped onions and sauté until translucent, about 3-4 minutes. Stir in the turmeric powder, red chili powder, and coriander powder.
- 3. Add the diced tomatoes and cook until they soften and release their juices, about 5 minutes.
- 4. Add the cauliflower, green beans, carrots, and bell peppers to the tawa. Mix well to coat the vegetables with the spices.
- 5. Cover and cook the vegetables for 10-12 minutes, stirring occasionally, until they are tender but not mushy.
- 6. Sprinkle garam masala and salt, mix well, and cook for another 2 minutes to allow the flavors to meld together.
- 7. Garnish with fresh coriander leaves and serve hot with chapatis or dosas.
