- 500 g Urad Dal
- 100 g Rasam Powder
- 100 g Tamarind Paste
- 1 l Refined Soyabean Oil
- 200 g Table Salt

- 1. Rinse 250g of urad dal thoroughly under running water to remove impurities. Then, soak the dal in water for at least 4 hours to soften the grains for grinding.
- 2. While the dal is soaking, prepare the rasam. In a pot, combine a spoonful of Sambal Oelek (chili paste) with 500ml of water and a pinch of table salt. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes. Keep the rasam warm on low heat.
- 3. After the dal has soaked, drain the water completely and grind the urad dal into a smooth, thick batter. Add a small amount of water if necessary to achieve the right consistency. Mix in a pinch of table salt to season the batter.
- 4. Heat Champion Oil (groundnut oil) in a deep pan or wok over medium heat. Use a thermometer to ensure the oil reaches the optimal frying temperature of 180°C (350°F).
- 5. Shape the dal batter into small balls or doughnut shapes using your hands or a spoon. Carefully place the shaped batter into the hot oil, frying in small batches to avoid overcrowding.
- 6. Fry the vadas until they are golden brown and crispy on the outside. This should take about 3-4 minutes per batch. Remove the fried vadas from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- 7. Grate a small piece of fresh ginger and stir it into the warm rasam. This will enhance the flavor of the rasam without affecting the texture of the batter.
