  • 100 g Quinoa
  • 2 pcs Zucchini
  • - Olive Oil
  • 100 g Hing Khoda
  • 100 g Lemon
  • 50 g Black Pepper Powder
  • 1 kg Bell Peppers
  • 100 g Til
  • - Baby Tomatoes
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 100 g Jeera Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the quinoa thoroughly and cook it in a pot with a lid on medium heat for about 15 minutes until fluffy. Set aside to cool slightly.
  2. 2. Preheat the oven to 200°C. Toss the cherry tomatoes, bell peppers, and zucchini with 1 tbsp olive oil, cumin powder, coriander powder, turmeric powder, and a pinch of salt. Spread the vegetables evenly on a baking tray and roast for 20 minutes until tender and lightly browned.
