- 200 g Paneer
- 500 g Onion
- 200 g Dahi
- 200G Adrak Lasun Paste (200g)
- 200 ml Mustard Oil
- 1 kg Bell Peppers
- 2 pcs Zucchini
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Jeera Powder
- 100 g Red Chili Powder
- 20 g Turmeric Powder
- 1Bunch Pudina
- 250g Green Chilli
- 100 g Lemon
- 1 kg Basmati Rice
- 100 g Salt
Instructions
- 1. In a large bowl, mix yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric, red chili powder, garam masala, mustard oil, and salt to create a marinade.
- 2. Add paneer cubes, bell peppers, zucchini, and onion to the marinade, ensuring they are well-coated. Cover and refrigerate for 20-30 minutes.
- 3. While the paneer and vegetables marinate, rinse the basmati rice thoroughly and cook it with 1 tsp cumin seeds and a pinch of salt until fluffy. Set aside.
- 4. Heat a grill pan or non-stick skillet over medium heat. Thread the marinated paneer and vegetables onto skewers or cook directly on the pan, turning occasionally, until lightly charred and cooked through (about 8-10 minutes).
- 5. For the mint chutney, blend mint leaves, green chili, lemon juice, a pinch of salt, and a small dollop of yogurt until smooth. Adjust seasoning as needed.
- 6. To assemble, place a bed of cumin rice in a bowl, arrange the smoky paneer and vegetable tikka on top, and drizzle with mint chutney. Serve immediately.
