- 50 g Parsley Leaves
- 2 pcs Zucchini
- 500 g Capsicum Green
- 500 g Tomato - Hybrid
- 250 g French Beans
- 500Ml Gaia Extra Virgin Olive Oil (500ml)
- - Thyme Leaves
- 40G Primi Piatti Rosemary Flakes
- 500 g Onion
- 100 g Salt
- 50 g Black Pepper Powder
Instructions
- 1. Rinse the green lentils thoroughly and set them aside.
- 2. Heat 1 tbsp olive oil in a large pot over medium heat. Add asafoetida and let it bloom for 10 seconds to release its aroma.
- 3. Add the chopped bell pepper, zucchini, green beans, and tomatoes to the pot. Sauté for 5-7 minutes until the vegetables are slightly softened.
- 4. Add the rinsed lentils to the pot along with turmeric powder, dried thyme, dried rosemary, salt, and black pepper. Stir well to combine.
- 5. Pour in enough water to cover the lentils and vegetables by about 2 inches. Bring the mixture to a boil over high heat.
- 6. Reduce the heat to low, cover the pot, and let the soup simmer for 25-30 minutes, stirring occasionally, until the lentils are tender and the soup has thickened.
- 7. Taste the soup and adjust the seasoning if needed. Remove from heat and let it sit for a few minutes before serving.
- 8. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy!
