  • 50 g Parsley Leaves
  • 2 pcs Zucchini
  • 500 g Capsicum Green
  • 500 g Tomato - Hybrid
  • 250 g French Beans
  • 500Ml Gaia Extra Virgin Olive Oil (500ml)
  • - Thyme Leaves
  • 40G Primi Piatti Rosemary Flakes
  • 500 g Onion
  • 100 g Salt
  • 50 g Black Pepper Powder

Instructions

  1. 1. Rinse the green lentils thoroughly and set them aside.
  2. 2. Heat 1 tbsp olive oil in a large pot over medium heat. Add asafoetida and let it bloom for 10 seconds to release its aroma.
  3. 3. Add the chopped bell pepper, zucchini, green beans, and tomatoes to the pot. Sauté for 5-7 minutes until the vegetables are slightly softened.
  4. 4. Add the rinsed lentils to the pot along with turmeric powder, dried thyme, dried rosemary, salt, and black pepper. Stir well to combine.
  5. 5. Pour in enough water to cover the lentils and vegetables by about 2 inches. Bring the mixture to a boil over high heat.
  6. 6. Reduce the heat to low, cover the pot, and let the soup simmer for 25-30 minutes, stirring occasionally, until the lentils are tender and the soup has thickened.
  7. 7. Taste the soup and adjust the seasoning if needed. Remove from heat and let it sit for a few minutes before serving.
