  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter, then add curry leaves, green chilies, and chopped onion. Sauté until the onions turn translucent.
  2. 2. Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears. Add the chopped tomatoes and cook until they soften and release oil.
  3. 3. Add turmeric powder, coriander powder, red chili powder, and black pepper powder. Mix well and cook for 1-2 minutes to bloom the spices.
  4. 4. Pour in the coconut milk and tamarind pulp, stirring to combine. Bring the mixture to a gentle simmer.
  5. 5. Add the paneer cubes and salt, mixing gently to avoid breaking the paneer. Cover and let the stew simmer for 8-10 minutes, allowing the flavors to meld.
  6. 6. Taste and adjust seasoning if needed. Turn off the heat and let the stew rest for 2-3 minutes before serving.
