Ingredients

  • 100 g Coriander Leaves
  • 1 Kg Pomfret Fish
  • 250 ml Lemon Juice Concentrate
  • 1 kg Basmati Rice
  • 100 g Lemon
  • 500 g Onion
  • - Green Chutney
  • 100 g Garlic
  • loose Ginger
  • 200 ml Mustard Oil
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 200G Adrak Lasun Paste (200g)
  • 100 g Salt
  • 1 liter Sunflower Oil
  • 50 g Garam Masala

Instructions

  1. 1. Clean the pomfret fish thoroughly by removing the scales, gills, and gut. Rinse under cold water and pat dry with a kitchen towel.
  2. 2. Prepare a marinade by mixing turmeric powder, red chili powder, ginger-garlic paste, lemon juice, and salt in a small bowl. Apply this mixture evenly on both sides of the fish and let it marinate for 10 minutes.
  3. 3. While the fish is marinating, rinse and soak the basmati rice in water for 10 minutes. Drain and set aside.
  4. 4. Cook the rice by boiling 6 cups of water in a pot. Add the soaked rice, 1 tsp of salt, and 1 tsp of oil. Cook for 8-10 minutes until the rice is tender but not mushy. Drain the water, cover the rice, and let it rest.
  5. 5. Heat a large skillet or tawa over medium heat. Add 2 tablespoons of mustard oil. Allow the oil to heat until it begins to smoke lightly, then reduce the flame to medium.
  6. 6. Place the marinated pomfret fish gently on the skillet and fry for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain excess oil.
  7. 7. Serve the fried pomfret alongside the steamed rice. Garnish with fresh coriander leaves and a wedge of lemon. Pair with sliced onions and green chutney for an authentic coastal touch.
