Ingredients
- 100 g Coriander Leaves
- 500 g Onion
- 500 g Tomato - Hybrid
- 100 g Ginger
- - Sri Sri Tattva Black Eyed Pea
- - Raw Banana (Plantains)
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 50 g Cumin Powder
- 20 g Turmeric Powder
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a large pan over medium heat.
- 2. Add 1 finely chopped onion and sauté until translucent.
- 3. Add 2 minced garlic cloves and 1 teaspoon of grated ginger, and sauté for another minute.
- 4. Stir in 1 chopped tomato and cook until it softens.
- 5. Add 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, and 1/2 teaspoon of chili powder. Mix well.
- 6. Pour in 1 cup of cooked black-eyed peas and stir to coat with the spices.
- 7. Add 1 peeled and diced ripe plantain, and gently mix to combine.
- 8. Pour in 1/2 cup of water, cover the pan, and let it simmer for 10 minutes.
- 9. Season with salt to taste, and cook for another 5 minutes until the plantain is tender.
- 10. Garnish with chopped fresh cilantro before serving.
