Instructions

  1. 1. In a bowl, mix warm milk, sugar, and active dry yeast. Let it sit for 5 minutes until frothy.
  2. 2. In a large mixing bowl, combine all-purpose flour, salt, and olive oil. Gradually pour in the yeast mixture and knead into a soft dough. Cover with a damp cloth and let it rise for 1 hour.
  3. 3. Prepare the filling by heating oil in a pan. Sauté onions and garlic until golden, then add bell peppers, grated paneer, chopped spinach, garam masala, red chili powder, and salt. Cook for 5 minutes and let it cool.
  4. 4. Preheat the oven to 200°C (400°F). Divide the dough into 4 equal portions and roll each into an oval shape. Place the filling in the center, leaving edges clear. Fold and pinch the sides to form a boat shape.
  5. 5. Brush the edges with egg wash or milk for a golden crust. Place the Pides on a baking tray lined with parchment paper and bake for 15 minutes until the crust is golden and crisp.
  6. 6. Remove from the oven, garnish with chopped coriander and a drizzle of lemon juice if desired. Serve warm with mint chutney or yogurt dip.
