Ingredients
- 1 kg Basmati Rice
- - Toned Milk
- 100 g Almonds
- - Green Cardamom Powder
- 500 g Sugar
- Pcs Saffron
Instructions
- 1. Rinse 3 tbsp of basmati rice thoroughly under running water. Soak the rice in water for 30 minutes, then drain and pat dry. Grind the rice into a coarse powder using a blender or spice grinder.
- 2. In a heavy-bottomed pan, bring 500 ml of full-fat milk to a boil over medium heat, stirring occasionally to prevent burning.
- 3. Once the milk comes to a boil, reduce the heat to low and add the ground rice gradually while stirring continuously to avoid lumps. Cook for 10-12 minutes, stirring frequently, until the mixture begins to thicken.
- 4. Add 5-6 tbsp of sugar and a pinch of saffron strands soaked in 2 tbsp of warm milk. Stir well until the sugar dissolves completely.
- 5. Add 1/4 tsp of cardamom powder and mix thoroughly. Continue cooking for another 2-3 minutes, stirring constantly, until the phirni reaches a creamy consistency.
- 6. Remove the pan from heat and let the phirni cool slightly. Transfer the mixture into small earthen bowls or serving dishes.
- 7. Garnish with 2 tbsp of chopped pistachios and almonds. Optionally, you can add a few rose petals for decoration. Chill in the refrigerator for at least 2 hours before serving.
