Ingredients

  • 6 pcs White Eggs
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 50 g Black Pepper Powder
  • 100G Oleo
  • 1 Kg Lokwan Premium Wheat Atta 1 Kg
  • - Coriander Powder
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 200 ml Ghee
  • medium Chilli Green Long
  • 100 g Coriander Leaves

Instructions

  1. 1. In a mixing bowl, combine whole wheat flour with a pinch of salt and water to form a soft dough. Knead well and let it rest for 20 minutes.
  2. 2. Heat oil in a pan over medium heat, add cumin seeds, and sauté until aromatic. Add chopped onions and cook until golden brown.
  3. 3. Stir in green chilies, tomatoes, turmeric powder, coriander powder, red chili powder, and black pepper powder. Cook until the tomatoes soften and the masala thickens.
  4. 4. Crack the eggs directly into the pan, gently stirring to combine them with the masala. Cook for 3-5 minutes until the eggs are set and coated in the masala. Add salt to taste.
  5. 5. Roll out the rested dough into thin discs and cook on a hot tawa (griddle) for 1-2 minutes on each side, brushing with ghee to achieve golden, flaky parathas.
  6. 6. Garnish the egg masala with chopped coriander leaves and serve hot alongside the freshly prepared tawa parathas.
