- 6 pcs White Eggs
- - Switz Puff Dough Paratha
- 500 g Onion
- 500 g Tomato - Hybrid
- 50 g Black Pepper Powder
- 200 ml Mustard Oil
- - Green Chutney
- 200 g Dahi
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 20 g Turmeric Powder
Instructions
- 1. Heat 1 tablespoon of oil in a pan over medium heat and add cumin seeds; let them splutter.
- 2. Add the sliced onions and cook until golden, then stir in the green chili, turmeric, black pepper, and red chili powder.
- 3. Beat the eggs in a bowl and season with a pinch of salt, then pour into the pan and scramble gently until cooked through.
- 4. Heat the parathas on a tawa or griddle until warm and pliable, then spread a thin layer of yogurt and green chutney over each.
- 5. Place a portion of the spiced scrambled eggs in the center of each paratha, top with chopped tomatoes and fresh coriander leaves.
- 6. Roll the parathas tightly around the filling to form kathi rolls and serve warm.
